Penny has taken the reins of Lotus of Siam to bring the restaurant into the next era, while upholding her family’s legacy and tradition. Her goal is to not only create a beautiful cultural atmosphere for guests, but to also educate them about the food and the experiences of Thailand. Under Penny’s leadership, Lotus of Siam continues to be a celebrity and foodie mecca, earning praise from a parade of respected food critics and industry leaders.
Penny and hospitality veteran Lou Abin have joined forces to launch Bua Food Group, a hospitality group that will develop and operate restaurants and other food and beverage concepts.The group's initial venture involved opening the third Lotus of Siam location within Red Rock Casino. Additionally, they launched Naxos Taverna, offering traditional Greek seafood-focused cuisine, and Kallisto Oyster Bar at Naxos, both situated at Red Rock.
